Profile of the cup: Fine and light palate, aromatic subtlety and character. Notes of cocoa, cherry and yellow fruits. To be enjoyed without moderation! The coffees from the two cooperatives have quite similar taste notes.

The Fondo Paez cooperative was founded in 1992 with the aim of bringing to life and reviving traditional cultures and ancestral agricultural skills, suppressed during decades of oppression. “Paez” refers to the historical name of the largest indigenous tribe in the country, in the Andean zone of southwestern Colombia. Fondo Paez has its own coffee washing / processing plant allowing it to ensure its independence from the Colombian authorities.

Cosurca, a sister cooperative, is an independent cooperative that also has its own factory and regulates its own export practices. Cosurca prioritizes permaculture and agricultural diversification (cocoa, panella, juice, compote) in order to avoid a marked dependence on a single product (coffee!).

The two cooperatives are certified in organic farming and labeled SPP "Symbol of Small Producers", a fair trade certification system that belongs to organizations of small producers. It is the first label created and managed by producers, and ensures a minimum price and an organic premium higher than other labels.
